- 250 grams Babycorn, cut in long pieces
- 4 tablespoons Cornflour (for frying paste)
- Water (for frying paste)
- Salt
- Pepper
- Oil
- Green Chillies, cut
- Ginger, cut
- 2 tablespoons Garlic, cut
- Onion, cut
- Capsicum, cut
- Spring Onion, cut
- 1/2 cup Tomato Sauce
- 3 tablespoons Schezwan Sauce
- 1/2 teaspoon Vinegar
- 1 teaspoon Soy Sauce
- 3 tablespoons Corn Flour (for gravy)(optional)
- Water (for gravy)(optional)
Instructions
Step 1
Parboil the babycorn and drain all the water.
Step 2
In a bowl, combine 4 tablespoons of cornflour with water, salt, and pepper to make a paste.
Step 3
Heat oil in a pan. Dip each piece of parboiled babycorn into the paste and fry until golden.
Step 4
Remove fried babycorn and spread on kitchen paper to drain excess oil.
Step 5
In the same pan, add some oil (if needed), green chilies, ginger, and garlic. Sauté.
Step 6
Add the onion and capsicum, and stir for a few minutes.
Step 7
Now add the fried babycorn, all the sauces (Tomato Sauce, Schezwan Sauce, Vinegar, Soy Sauce), and salt and pepper to taste.
Step 8
If a thicker gravy is desired, add the optional 3 tablespoons cornflour paste (made with water).
Step 9
Serve hot, garnished with spring onions.
