  • 0.25 teaspoons fresh ground white pepper
  • 0.25 cups chopped shallots
  • 1.0 cups dry white wine
  • 1.0 cups champagne vinegar

Instructions

Step 1

Boil the alcohol out of the white wine.

Chop the shallots and rinse in cold water (this will crisp them and remove the bitter flavor).

Step 3

Chill well before serving with fresh oysters.
