- 0.25 teaspoons fresh ground white pepper
- 0.25 cups chopped shallots
- 1.0 cups dry white wine
- 1.0 cups champagne vinegar

Step 1
Boil the alcohol out of the white wine.

Chop the shallots and rinse in cold water (this will crisp them and remove the bitter flavor).

Chill well before serving with fresh oysters.
