Tasty Lettuce Wraps
My cousin Ashley introduced me to the world of lettuce wraps back when I was visiting her one summer in Kansas City, at Blue Koi, a simplistic and fresh Chinese restaurant. They have the most addicting and delicious foods. These wraps are nourishing and a great way to stretch your ground meat. Warning, it will be hard to resist eating them all.

- 1/2 pound ground turkey, chicken, beef
- 4 eggs
- 1 medium onion
- 2 cloves garlic
- 2 medium carrots
- 1/2 can water chestnuts
- 1/2 medium cabbage
- 1 inch piece ginger
- 3 tablespoons coconut oil
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 head Romaine lettuce
Instructions
Step 1
Finely chop all vegetables. Heat a skillet, add coconut oil, and sauté the onions and garlic until soft. Remove them from the skillet. Then, sauté the ginger and carrots for about 10 minutes or until tender.
Step 2
Add the ground meat, water chestnuts, soy sauce, and sesame oil to the skillet, stirring occasionally. While the meat cooks, wash the Romaine lettuce. When the meat is almost cooked, add the eggs, scramble them into the mixture, and cook for a couple more minutes.
Step 3
Spoon small portions of the meat mixture onto the Romaine lettuce leaves. Serve immediately, optionally with brown rice.
