- 2/3 cup whole fresh organic strawberries with the tops removed
- 1/4 cup organic milk
- 1 teaspoon vanilla
- 1 1/2 cups white flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted organic butter (1 stick), at room temperature
- 1 cup white sugar
- 1 egg organic egg
- 2 egg white egg whites, at room temperature
Instructions
Step 1
Preheat the oven to 350°F and line a cupcake pan with cupcake liners.
Step 2
Quarter the strawberries and puree until smooth. Measure 1/3 cup of the puree and set aside any extra to use for frosting.
Step 3
In a separate bowl, mix the 1/3 cup strawberry puree, milk, and vanilla.
Step 4
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 5
In a large bowl, cream the butter until light and fluffy. Continue to mix while slowly adding the sugar.
Step 6
Mix in the organic egg until just barely incorporated, then add the egg whites one at a time until just mixed in.
Step 7
Alternately, add the flour mixture and the strawberry mixture to the butter mixture, beginning and ending with the flour mixture, mixing until just combined after each addition.
Step 8
Spoon the batter into the prepared cupcake pans. Bake for 20-25 minutes, rotating the pans 180 degrees halfway through baking. The cupcakes are done when a toothpick inserted into the center comes out clean.
Step 9
Cool the cupcakes in the pan for 5-10 minutes, then transfer them to a wire rack to cool completely. Once completely cool to the touch, frost the cupcakes with the fresh strawberry frosting.
