- 1 pinch cinnamon(optional)
- pinch nutmeg(optional)
- 1 teaspoon butter
- 1 egg egg, beaten
- 1/2 teaspoon vanilla
- 1/2 cup sugar
- 4 cups whole milk
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3/4 cup medium or short grain rice

In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and salt, then stir.

Simmer covered until water has been absorbed.

In another saucepan, stir in 1 1/2 cups milk, sugar, and 1 1/2 cups cooked rice. Cook over medium heat.

Stir constantly until thick and creamy.

Combine 1/2 cup milk and beaten egg, then add to the saucepan. Cook 2 minutes more, stirring constantly.

Remove from heat, then add in butter and vanilla.
