Cowboy "Cookie" Power Bites

- 3/4 cup rolled oats
- 1/2 cup shredded coconut
- 1/3 cup dairy-free Enjoy Life chocolate chips
- 1/3 cup roasted pecans
- 1 tablespoon dark muscovado sugar
- 1/2 cup almond flour
- 1/3 cup creamy almond butter (plus 1 tablespoon)
- 2 tablespoons local honey
- 1 teaspoon vanilla extract
- 2 tablespoons chia seeds
- dash cinnamon
Instructions
Step 1
In a large mixing bowl add the rolled oats, coconut, chocolate chips, pecans, muscovado sugar and almond flour, mix well to blend.
Step 2
Add the almond butter, honey, vanilla, chia seeds and cinnamon and mix to incorporate. Place in the refrigerator and allow to chill for 15 minutes.
Step 3
Remove the mixture form the refrigerator and using your hands, press firmly and form into 1-inch balls. (Note: if the mixture is too dry, add a bit more almond butter.)
Step 4
Store the power bites in an airtight container in the refrigerator. The power bites stay fresh for about 1 week.
