- 1 cup coconut cream
- 1 stem lemon grass, 10 cm long
- 1 teaspoon ground turmeric
- 2 cloves garlic, crushed
- 2 teaspoon grated fresh ginger
- 3 small red chillies, seeded and sliced in short, thin strips
- 250 gram ripe tomatoes
- 1 cup lime juice
- 1 kg chicken thigh fillets, cut into 3 cm cubes

Combine chicken with lime juice and let stand.

Chop tomatoes, combine with water, blend until smooth, then strain into a pan.

30 minutes
Add chillies, ginger, garlic, turmeric, lemongrass (remove before serving), and the undrained chicken to the pan. Bring to a boil, then reduce heat, cover, and simmer.

10 minutes
Add coconut cream and simmer, uncovered.
