- 2 tablespoons Fresh lemon juice
- Paprika(optional)
- 1/2 teaspoons Hot Hungarian pepper
- 3 tablespoons Chopped fresh cilantro
- 1 pints Fresh blackberries
- 1/2 teaspoons Salt
- 2 cloves Garlic, minced
- 4 tablespoons Butter
- 25-30 pieces Chicken wing drummies
Instructions
Step 1
Place the chicken wing drummies in a single layer in a baking pan and brush them with melted butter.
Step 2
In a separate bowl, mash the minced garlic and salt together into a paste. Using a wooden spoon, push the fresh blackberries through a non-metallic sieve to extract their juice; discard the seeds. Mix the garlic paste and blackberry juice with the fresh lemon juice, paprika (if using), chopped fresh cilantro, and the 4 tablespoons of butter. Let the sauce sit to allow the flavors to blend.
Step 3
Preheat oven to 375°F (190°C). Bake the drummies for 30 minutes. After 30 minutes, brush the blackberry sauce evenly onto the wings and continue to bake for another 30 minutes, or until the wings are tender. Baste and turn the wings frequently during this second baking period. If the sauce cooks away before the wings are done, add a small amount of water to the pan.
