- 500 gram flour (plus extra to knead)
- 1 egg egg, at room temperature
- 250 milliliter milk, warm
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 20 gram yeast
- 100 gram cheese, grated
- 50 gram garlic butter, frozen
- 50 gram butter, at room temperature
- 1 tablespoon parsley, chopped
- 1 clove garlic, minced
- salt(optional)
- 1 egg egg, lightly beaten
- 1 tablespoon sesame seeds
- 1 tablespoon poppy seeds
Instructions
Step 1
Prepare the Garlic Butter by adding 1 tablespoon parsley, 1 clove minced garlic, and a pinch of salt (optional) to 50g softened butter. Mix well.
Step 2
Roll the garlic butter firmly in plastic wrap. Chill in the freezer for 2-3 minutes for ease of cutting or 4-5 minutes for easy grating. Store in a fridge.

Preheat oven to 360°F (180°C).

In a large bowl or the bowl of an electric mixer, dissolve yeast in warm milk, then add egg, oil, and sugar. Mix well.

In a separate bowl, mix half of the flour and salt, then add it to the liquid ingredients. Mix at medium speed and let rest for about 10 minutes.

Gradually add the remaining flour until a soft, elastic dough forms, separating from the walls of the bowl. Adjust consistency by adding 1-2 tablespoons flour if the dough is too soft, or 1-2 tablespoons warm milk or water if it's too hard.

Cover the bowl with plastic wrap or a cloth and let the dough rest for about 15 minutes.

While the dough is resting, shred the cheese and frozen garlic butter, then mix them well. Store this mixture in the refrigerator.

Pour the dough onto a flat floured surface and divide it into two equal parts.

Using a rolling pin, roll each part into a rectangular crust, approximately 40x60 cm and 0.5 cm thick.

Sprinkle each crust evenly with the mixed shredded cheese and garlic butter.

Roll the crusts and cut them into trapezoidal pieces (about 8-10 cm at the base).

Arrange the rolls on an oiled and floured pan or on parchment paper, ensuring space between them to prevent sticking during baking.

Cover the rolls with plastic wrap or a cotton cloth and let them rise in a warm place for about 15 minutes.

Lightly press the rolls in the middle with a flour-coated stick (or the handle of a wooden spoon) to encourage the dough layers to open better.

Spread the rolls with lightly beaten egg and sprinkle half with sesame seeds and the other half with poppy seeds (shredded cheese is an optional alternative).
