Vegan Apple Loaf

Ingredients

  • 2-3 apples apples (Empires or similar)
  • 1.5 cup all-purpose flour
  • 1 cup white sugar
  • 1/4 cup corn meal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons cinnamon
  • 1/2 cup sugar free apple sauce or apple spread
  • 1 teaspoon white vinegar
  • 1 cup water
  • vanilla ice cream(optional)
  • butterscotch sauce(optional)

Instructions

Step 1

Heat oven to 325 degrees Fahrenheit.

Grease or spray with cooking spray one 9 x 5 loaf pan.

Finely chop apples.

Sift together dry ingredients.

Toss apples in dry ingredients.

Add the wet ingredients.

Mix together until smooth.

50 minutes to 1 hour

Pour into pan and bake until a stick inserted into the center does not have batter on it when removed.

Allow to cool for at least 20 minutes before cutting and serving.

If serving for dessert, top with a scoop of vanilla ice cream and drizzle warmed butterscotch sauce over the top.
