  • 1 jar crystallized ginger (5 oz)
  • 2 tablespoons lemon juice
  • 8 large tart apples
  • 5 cups sugar
  • 2 cups water

Pour sugar into a heavy 5 qt pot and stir in water until well blended. Bring the mixture to a boil over high heat, stirring often. Reduce heat to medium and cook, uncovered.

Pare and core the apples, then cut them into 1/4 inch thick slices (to make about 8 cups). Sprinkle with lemon juice and mix well.

Drain the crystallized ginger, reserving its syrup. Chop the ginger to make about 1/2 cup.

Add the prepared apples, chopped ginger, and reserved ginger syrup to the sugar-water mixture. Cook, boiling gently.
