- 6 lemons, cut in half lengthwise
- 1 3 oz. pkg. lemon jello
- 3 tablespoons sugar
- 1 cup boiling water
- 1/2 cup fresh lemon juice
- 1/2 cup cold lemon vodka(optional)
Instructions
Step 1
Juice the lemons using a citrus press, reserving the juice. Then, hollow out the lemon halves by turning them inside out to remove the pith and membrane, creating vessels.
Step 2
In a mixing bowl, combine the lemon jello powder and sugar.
Step 3
Add the boiling water to the jello mixture and stir until the jello powder and sugar are fully dissolved.
Step 4
Stir in the reserved fresh lemon juice and the cold lemon vodka (if using).
Step 5
Place the hollowed-out citrus cups into the holes of a muffin pan. Carefully pour the prepared jello mixture into each citrus cup.
Step 6
Chill the jello shots overnight until fully set.
Step 7
Once set, use a sharp, straight-edge knife to cut the jello-filled citrus into wedges.
