- 2.0 tablespoons baking soda
- 30.0 pear tomatoes with stem tops removed
- 1.5 cups granulated sugar

In a large bowl, combine 4 quarts water and baking soda.

Add tomatoes and soak for 10 minutes. Drain them.

20 minutes
In a large saucepan, combine 1.5 cups granulated sugar and 2 cups water. Bring the syrup to a boil, then add the tomatoes. Simmer for 20 minutes. Remove from heat and allow to cool. Repeat simmering the mixture for 20 minutes after each cooling until the syrup is absorbed by the tomatoes.

Dry tomatoes on waxed paper placed on trays in the sun.

Dredge dried tomatoes with granulated sugar and store in an airtight container.
