- 1/4 cup Ghee
- 1 cup Sugar
- 2-3 teaspoons Melon Seeds
- 1/4 cup Pecans or Walnuts
- handful Makhana(optional)
- 1 teaspoon Green Cardamom (freshly crushed)
- 1 cup Shredded Coconut
- 1/4 cup Pistachio
- 1/2 cup Golden Raisins
- 1 cup Cashews (sliced into halves)
- 1 cup Almonds
Instructions
Step 1
To prepare the nuts, traditionally they are fried in ghee one by one. Alternatively, use pre-roasted nuts or roast them at home using an oven or microwave.
Step 2
If roasting in a conventional oven, spread the nuts in a shallow baking tray and drizzle warm ghee over them.
Step 3
Bake the nuts for 10-15 minutes at 350 degrees F, until they become crunchy and brownish in color.
Step 4
Gently pound half of the roasted nuts until coarsely crushed.
Step 5
In a mixing bowl, combine the pounded nuts with sugar, shredded coconut, and crushed green cardamom.
Step 6
Add the remaining whole roasted nuts to this mixture and toss thoroughly to combine all ingredients.
Step 7
The Shahi Panjiri is now ready to serve.
