  • 1 cup water
  • 1/2 cup quinoa (red, white or mix)
  • 1 pinch salt
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut milk or soymilk
  • 1/3 cup dried fruits and nuts (chopped figs, raisins, and pumpkin seeds)
  • 1 pinch ground vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup cooked brown rice(optional)
  • 1 tablespoon coconut butter(optional)

Instructions

Step 1

Boil 1 cup of water and a pinch of salt.

15-20 minutes

Add the quinoa, lower the heat, and cook until very soft. The quinoa tails should pop out.

Add all other ingredients to the saucepan and warm for a few minutes until hot enough to eat.

If using coconut butter, melt it by placing the jar in a bowl of very hot water and stirring until creamy and pourable. Alternatively, mash the cold coconut butter into the quinoa with a fork until it melts.
