  • 2 tablespoon olive oil
  • 1 link andouille sausage, diced
  • 1 link andouille sausage, sliced into discs
  • 1 bunch Swiss chard, stems removed and leaves chopped
  • 1 shallot, chopped
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon fresh thyme
  • 2 medium-sized potatoes, peeled, cooked and cut into chunks
  • 8 eggs, beaten
  • salt and pepper(optional)
  • 1/2 cup Parmesan cheese

Instructions

Drizzle olive oil into a large skillet and heat over medium heat.

Add the andouille sausage (both diced and sliced) and cook until lightly browned.

Reduce heat to medium-low and add the Swiss chard.

Once the Swiss chard has wilted, add the cooked potatoes, shallot, red pepper flakes, thyme, salt, and pepper.

Saute until all ingredients are well-distributed.

Pour in the beaten eggs and very gently stir until they begin to firm.

Sprinkle Parmesan cheese evenly over the top.

Place the skillet under a preheated broiler until the eggs are fully set and the top is golden.

Remove from heat and allow to cool for 5 minutes before serving.
