  • 12 ounce Swiss Chard trimmed and chopped
  • 0.5 pound smoked sausage diced into ½ inch pieces
  • 3 medium baking potatoes peeled and diced into ½ pieces
  • 2 cloves garlic minced
  • 1/4 cup water
  • Extra Virgin Olive Oil
  • Sea Salt
  • 3 tablespoons Extra Virgin Olive Oil (for dressing)
  • 1 teaspoon stone ground mustard (for dressing)
  • 1 tablespoon white wine vinegar (for dressing)
  • 1/4 teaspoon sea salt (for dressing)
  • 1/4 teaspoon fresh ground black pepper (for dressing)
  • 1/8 teaspoon sugar (for dressing)

Instructions

Step 1

Whisk ingredients for the dressing together and set aside.

Heat 1 teaspoon Extra Virgin Olive Oil over medium heat in a non-stick skillet.

5-7 minutes

Add smoked sausage and cook until browned.

Remove sausage and set aside. Wipe out the skillet.

Heat 1 tablespoon Extra Virgin Olive Oil over medium heat.

30 seconds

Add garlic and sauté until fragrant.

Add potatoes. Cook, stirring frequently, until potatoes are tender.

Season with sea salt.

Return sausage to the pan and stir.

Add 1/4 cup water to the pan and place chard on top of the potato and sausage mixture.

Cover pan and allow to steam.

Stir mixture and turn greens over.

3 minutes

Cover and steam for 3 more minutes. Mix thoroughly.

Sprinkle dressing over the chard, potato, and sausage mixture and mix to coat.
