Cut potatoes into thin wedges and spread them out on a cookie sheet. Coat potatoes with extra-virgin olive oil, dried oregano, dried thyme, and Montreal steak seasoning. Alternatively, season with salt and pepper. Ensure potatoes are spread to the corners of the cookie sheet.

Cook potatoes in the very hot oven for 25 minutes. Turn potatoes once, halfway through the cooking process. Serve fries hot from the oven.
