Sophisticated Holiday Green Bean Casserole by Mary Bogue
I like to prep this job the day before and put all the ingredients in Ziplocs. Then cook as I go. Woosh. Done! You're a genius...and you didn't cop out with that trailer-trash recipe of beans with canned mushroom soup and fried onions from a can. Nah, you're gourmet cooking now! I'm so proud of you.

- 1 cup Italian Bread Crumbs
- 1 teaspoon Thyme
- 1-1/2 tablespoon Balsamic Vinegar
- 1-1/2 teaspoon Sugar
- 0.125 teaspoon Ground Black Pepper
- 0.25 teaspoon Salt
- 1 package Mushrooms (baby portabellos work great)
- 2 pounds Fresh Green Beans, ends trimmed
- 1 cup Sour Cream
- 1 large Sweet Onion (like a Vidalia)
- Oil(optional)
- Non-stick cooking spray(optional)
- 1 pat Butter
Instructions
Step 1
Preheat oven to 350°F. Slice the onion into thin rings and set aside.
Step 2
Rinse the green beans with cool water, trim the ends, and snap them into 1-1/2 inch pieces. Prepare an ice bath. Sauté the beans in a little oil or non-stick spray for about 5 minutes, then plunge them into the ice water. Once cool, drain the beans.
Step 3
While the beans are cooking, coat a large nonstick skillet with non-stick cooking spray and preheat over medium heat. Add the sliced onions, thyme, salt, and pepper. Sauté for about 5 minutes, or until the onions are wilted and just starting to brown. (If the skillet becomes too dry, add a few teaspoons of water as needed.) Add the sugar and sauté for another minute. Remove from heat and transfer the onions to a bowl.
Step 4
Dry brush and chop the mushrooms. Add them to the same skillet with a pat of butter and cook until slightly softened and browned. When finished, mix the cooked mushrooms and their juices with the sour cream in a bowl. Mix well.
Step 5
Spray or oil a baking dish or casserole dish. Add the blanched green beans, then pour the mushroom and sour cream mixture on top. Finish with a layer of the sautéed onions, then sprinkle with bread crumbs. Place into the preheated oven and cook for 30 minutes or so.
