  • 1/2 cup milk
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1 cup chopped pecans
  • 1 cup chopped dates or coconut
  • 2 cups coconut
  • 3 cups peeled, chopped apples
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups sifted flour
  • 3 unit eggs
  • 1 cup vegetable oil
  • 2 cups sugar

Instructions

Step 1

Mix together 2 cups of sugar and 1 cup of vegetable oil. Add 3 eggs and beat well.

Blend in 3 cups of sifted flour, 1 teaspoon of baking soda, and 1 teaspoon of salt. Add 1 teaspoon of cinnamon and 2 teaspoons of vanilla extract.

Stir in 3 cups of peeled, chopped apples, 2 cups of coconut, 1 cup of chopped dates (or 1 cup of chopped coconut if using as an alternative), and 1 cup of chopped pecans. The batter will be thick.

Spoon the batter into a 9-inch or 10-inch tube pan which has been greased and floured.

Bake at 325 degrees Fahrenheit for 1 1/2 hours, or until a toothpick inserted into the center comes out clean.

For the caramel sauce, heat ingredients (milk, butter, and packed brown sugar from the ingredient list are likely for this sauce) together in a saucepan and boil for 2 minutes.

Remove the cake from the oven and immediately pour the prepared caramel sauce over it, allowing it to soak in.
