Vegan Cheesy Garlic Aioli

BeginnerThis (mostly) raw vegan aioli is so rich that it stands right up to its traditional mayo based counterparts. With a cheesy mouth feel and garlicky finish this dip goes well with anything.

Raw Vegan Cheesy Garlic AioliIngredients
- 1 cup Raw Cashews, Soaked for 8 hours
- 2 cloves Garlic, Roasted or Raw
- 5 tablespoons Olive oil
- 1/4 cup Water
- 1/2 teaspoon Onion Powder
- 3/4 teaspoon Sea Salt
- 4 teaspoons Nutritional Yeast
- 4 teaspoons Rice Vinegar

Step 1
1. Preheat oven to 325 degrees. Slice garlic through the middle drizzle with olive oil salt and pepper, wrap in tinfoil and bake for 25 minutes or until garlic is soft. Pop out two cloves and save the rest.

2. In a Vitamix, blend all of the ingredients together until smooth. Add extra water, one tablespoon at a time if the Aoli is too thick to blend.
