  • 4 tablespoons finely chopped shallots
  • 1 tablespoon finely chopped parsley
  • 2 pinches salt
  • 1 pinch black ground pepper
  • 2 teaspoons yellow mustard
  • 15.5 tablespoons olive oil
  • 25.5 tablespoons red wine vinegar
  • 2 Large Eggs
  • 50 grams pickled cucumber

Step 1

Hard boil the eggs. Drain hot water from the pan and run cold water over the eggs. Cracking the egg shells while the eggs are cooling will make it easier to peel them. Let the eggs sit in the cool water for a few minutes, changing the water if necessary to keep it cool. Peel the eggs.

Step 2

Finely chop shallots, parsley, and peeled eggs, then put them in a bowl. Add salt, pepper, mustard, olive oil, red wine vinegar, and grated pickled cucumbers.
