Cake Pops!

I was quite over ambitious with this recipe. My boss and another co-worker on my team have birthdays on the same day. I wanted to make them something, and then I had a revelation- cake pops! I decided on cake pops, because they seem easy enough to make and they are so darn cute. They also make great gifts or party favors. Warning! They are not as easy as they seem and are quite time consuming. With that being said, just look at how cute they are? And if I can do it, you can do it. Trust me.

Ingredients

  • 1 box cake mix
  • 1 can frosting
  • chocolate candy melts
  • cookie sticks or lollipop sticks
  • decorations/sprinkles(optional)

Step 1

Make and bake cake according to the package’s directions. Once the cake is finished let it cool.Then crumble the cake in a large mixing bowl using your hands. Pour the frosting into the bowl and mix the cake with the frosting until it looks like a large blob. I used the whole can of frosting, but other recipes I saw only used half the can. Using your hands or a mini ice cream scoop form one to two inch balls with the cake mixture. Melt the chocolate candy melts according to the package directions. Dip the cookie sticks into the candy melt and place into the ball. This acts as a glue. After all the sticks are in, place the balls in the freezer for 20 minutes. Finally, dip the balls into the melted candy and swirl until the chocolate covers the entire ball. Store these standing up in a cup or a styrofoam block.
