Berry Baked French Toast
This is not you average French Toast recipe. Fresh French Bread, brown sugar and your favorite fruits baked together in a breakfast casserole that is as beautiful as it is tasty. This is a special occasion breakfast recipe that you can also make ahead of time. I selected this recipe to serve my mother this Mother’s Day morning and it was a hit with Mom and my daughters. If you are not a fruit and berry lover, you can also skip the fruit and use maple syrup instead. When you remove from oven, sprinkle powdered sugar over maple syrup. Enjoy! www.lunch-wagon.com

- 1 loaf fresh French Bread
- 6 egg whites
- 3 eggs
- 1.75 cup milk
- 1 teaspoon brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- dash salt
- 12 ounce package frozen fruit(optional)
- 3 tablespoons cold butter
- 2/3 cup brown sugar
Instructions
Step 1
Slice a loaf of fresh French bread in half lengthwise.
Step 2
Cut or pull the bread into bite-sized pieces.
Step 3
Spray a 13x9 inch glass baking dish with cooking spray.
Step 4
Place bread cubes into the baking dish.
Step 5
In a large bowl, combine egg whites, eggs, milk, 1 teaspoon brown sugar, cinnamon, vanilla, and salt.
Step 6
Mix lightly with a whisk.
Step 7
Pour the egg mixture evenly over the bread cubes.
Step 8
Cover and refrigerate for 8 hours.
Step 9
Minutes before cooking, remove the package of fruit from the freezer to thaw.

Preheat oven to 350 degrees F.

Remove the baking dish from the refrigerator and place on the counter while the oven heats.

Bake covered at 350 degrees F for 30 minutes.

In a small bowl, cut cold butter into the 2/3 cup brown sugar until crumbly.
Step 14
Sprinkle fruit over the french toast.
Step 15
Sprinkle the butter-brown sugar mixture over the fruit.
Step 16
Bake uncovered for 15 minutes.
