- 1 package Blue Bran VitaMix
- 2 egg whites
- 1 cup water
- 1/2 cup canned pumpkin
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon-sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon allspice
- 2 tablespoons Smart Balance Light®
Instructions
Step 1
Preheat oven to 400°F. Line a standard muffin pan with baking cups (foil baking cups are recommended) or use VitaTop baking pans. Set aside.
Step 2
In a large mixing bowl, combine Blue Bran VitaMix, water, egg whites, canned pumpkin, ground cinnamon, vanilla extract, ground ginger, and ground nutmeg.
Step 3
Melt the Smart Balance and pour it into the bowl with the other ingredients.
Step 4
Mix all ingredients well.
Step 5
Scoop 1-2 tablespoons of the mixture into the prepared baking cups or pan.
Step 6
Bake for about 25 minutes.
Step 7
Remove from oven, sprinkle cinnamon-sugar over the top of each muffin, and allow thorough cooling.
