Preheat oven at 350. Prepare 12 muffin pans with cooking spray and flour.
In a mixing bowl, combine flour, baking powder, baking soda, salt, and sugar. In another mixing bowl, combine milk, egg white, honey, applesauce, vanilla, orange peel, and blueberries. Mix dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill batter evenly among pans. Bake for 13 to 16 minutes or until brown.
