  • 1 1/2 cup rice
  • 1 can 13 oz. chicken broth
  • 1 clove garlic, minced
  • 1 can 28 oz. whole tomatoes, with puree
  • 1 chopped green pepper
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dry mustard
  • 1 package sweet turkey sausage
  • 4 tablespoons vegetable oil
  • 1 large bay leaf
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper

Step 1

Cut the sweet turkey sausage into 3 to 4 pieces.

In a large deep skillet, heat the vegetable oil over medium-high heat. Add the cut sausage pieces and brown them on all sides.

2 to 3 minutes

Stir in the thyme, dry mustard, salt, ground white pepper, ground black pepper, cayenne pepper, chopped celery, chopped large onion, and chopped green pepper. Saute for 2 to 3 minutes until the vegetables are slightly softened.

Stir in the whole tomatoes with puree, minced garlic, chicken broth, and rice. Bring the mixture to a boil.

20 minutes

Reduce the heat to low, cover the skillet, and cook for 20 minutes until the rice is tender but still firm.

Discard the large bay leaf. Stir the jambalaya and serve hot.
