  • 1 cup crushed pineapple, well drained
  • 3 cup granulated sugar
  • 2 teaspoon lemon juice
  • 2 tablespoon butter
  • 1 cup evaporated milk
  • pecan halves(optional)

Step 1

Combine evaporated milk, granulated sugar, and butter in a saucepan. Heat slowly to boiling point, stirring constantly.

Add the well-drained crushed pineapple and cook over medium heat to softball stage (234 degrees F), stirring constantly to prevent burning.

Step 3

Remove from heat and cool. Add lemon juice and beat until the mixture becomes crystalline.

Step 4

Turn the fudge into a buttered pan. Mark into squares and decorate with pecan halves, if desired.
