- 10 pieces Jumbo Prawns, raw
- 2 cloves Garlic
- 1 teaspoon Sesame Oil
- 1 teaspoon Onion Powder
- 1 piece Egg White, beaten
- 1 tablespoon Potato Flour (or Cornstarch)
- 1 teaspoon Turmeric
- 100 grams Black Sesame Seeds
- Salt
- Pepper
- Vegetable Oil, for frying
- 1/2 teaspoon Wasabi
- 1/2 cup Mayonnaise
- 1 tablespoon Rice Vinegar
- Passionfruit or small avocado (for head, optional)(optional)
- Olive slices or strawberries (for eyes, optional)(optional)
Instructions
Step 1
Peel the prawns and with a sharp knife, score the flesh horizontally on both sides for them to remain flat.
Step 2
Mince the garlic finely.
Step 3
Sprinkle the sesame oil over the prawns, add the minced garlic and coat well. Add beaten egg white and coat.
Step 4
In a bowl, combine the sesame seeds, the flour, the onion powder, turmeric, and a generous amount of salt and pepper.
Step 5
In a bowl, combine the mayonnaise, vinegar and wasabi. Season to taste and transfer to a small black bowl. This makes the body of the spider. Place in the center of a large round dish, preferably a lighter colour like mauve.
Step 6
Heat the oil in a deep pot. The oil is hot enough when a cube of bread browns in 30 seconds.
Step 7
Lift each prawn out of the egg and let it drip before dipping into the sesame mixture, coating well. Place in the hot oil for 1-2 minutes or until cooked through.
Step 8
Drain on paper towels and serve, surrounding the dip bowl. You may also add a passionfruit or small avocado as the head, with olive slices or strawberries pinned with a toothpick for the eyes.
