Quick & Easy ~ Black Beans & Rice!
1 pint of grape tomatoes – halved
3 bunchs scallions – chopped
1 head of garlic – crushed& chopped
1 bell pepper – chopped
1 bunch of cilantro – chopped
1 Jalapeño – chopped with seeds
29 oz. can of black beans- rinsed& drained
Olive oil – for drizzling
1 tablespoon – LivingtheGourmet Spice Rub
1 teaspoon brown sugar
Prepare the rice as directed.
Add the cooked rice to the sautéed veggies and toss. Add the beans, toss and continue to cook on low until everything is evenly heated.
Combine the ingredients for the seasoning. Add to the rice and beans and again toss.
