  • 1 English cucumber
  • sea salt
  • 2 tablespoons white wine vinegar
  • 2 teaspoons rice vinegar
  • 2 teaspoons Splenda
  • 1 tablespoon fresh dill(optional)
  • 2 teaspoons dried dill(optional)
  • 2 tablespoons crumbled feta cheese

Instructions

Step 1

Slice the English cucumber into long thin ribbons using a mandolin slicer or vegetable peeler, then lightly salt the ribbons.

In a medium bowl, mix the white wine vinegar, rice vinegar, Splenda, fresh dill (or dried dill), and crumbled feta cheese to create the dressing.

Place the cucumber ribbons and the prepared dressing into a large plastic zip lock bag. Chill the bag in the refrigerator for at least one hour.

Pour the salad into a serving bowl.
