Gado Gado Peanut Sauce

Gado Gado is an Indonesian vegetable salad dish served with a peanut sauce. This sauce is also excellent served over steamed vegetables or rice. Thicker sauce can be used as a dip for fruit and vegetables. Optional gluten free substitutions: Rapadura or palm sugar in place of brown sugar, and tamari sauce in place of soy sauce can be used.

  • 1 lime juice
  • 2 cup water
  • 1 tablespoon soy sauce
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon chili powder
  • 2 small shallots, minced
  • 2 tablespoon olive oil
  • 8 ounce chunky peanut butter
  • 2 cloves garlic, chopped
  • 1 medium white onion, chopped
  • rapadura(optional)
  • palm sugar(optional)
  • tamari sauce(optional)

In a skillet over medium-low heat, saute garlic and onions until soft but not brown.

Add shallots and continue to saute until soft.

Next, add peanut butter and water and stir until thoroughly mixed; cook until first bubbles appear.

Add chili powder, soy sauce, sugar, and lime juice.

Cover, reduce heat to low, and simmer for 15 minutes; stirring frequently.
