  • 1 tablespoon Butter
  • 2 cloves Garlic, Minced
  • 1 onion Onion, Chopped
  • 1 chicken breast Chicken Breast, Cut into Bite Sized Pieces
  • 1 cup Cubed Cooked Ham
  • 1.5 cups Arborio Rice
  • 3 cups Chicken or Veggie Broth
  • 1 cup White Wine
  • 1/8 teaspoon Nutmeg
  • 1/8 teaspoon Pepper
  • 1/4 teaspoon Basil
  • 1/4 cup Cream
  • 1/4 cup Gorgonzola Cheese
  • 1 10 ounce package Frozen Spinach
  • Salt(optional)

Heat butter in a large skillet over medium heat. Add minced garlic and chopped onion. Cook for 1 to 2 minutes. Add chopped chicken breast and cook for a few minutes, then add cubed ham. Continue cooking until the chicken juices run clear.

Add rice to the skillet and brown for 3 to 4 minutes.

In a separate bowl, mix together the broth and wine. Add the liquid to the skillet, 1 cup at a time, allowing each addition to cook down while stirring occasionally. Continue adding a cup at a time after each portion finishes cooking down. Cover the pan for the last two cups of added liquid.

When all the liquid has cooked into the rice, add nutmeg, pepper, and basil. Turn the heat down to low. Add in the cream and Gorgonzola cheese. Finally, stir in the spinach.

Stir everything together and allow it 1 to 2 minutes to heat back up.
