Add 1 bsp. Oil to wok and wtir fry on high heat for approximately 5 minutes. Add sugar, soy sauce and Sake (rice wine). Add a tsp. of sesame seed oil (optional) for flavoring. cook until liquid is almost evaporated.
Add pepper and mix. Remove to serving dish and garnish with sesame seeds ( if chirimen iriko is to be used, rinse fish first and add to gobo when adding pepper.)
Keep 1 week in regrigerator. Also good with 1 to 2 carrots,cut into match stick size and fried with gobo. Adds color and nutrition.
