Pesto Siciliano
There are so many different types of pesto recipes and depending on the region of Italy you are in you might find when you order a pesto sauce. The list is endless, like most Italian pasta recipes, for pesto's. This one utilizes all the local ingredients typical to Sicily. Mint, Almonds, garlic and because Southern Italian recipes tend to like it with a little heat, some crushed red peppers.

- 2 cups fresh mint leaves
- 2 cloves fresh garlic
- 4 plum tomatoes
- 3 ounces blanched almonds
- 1/2 cup Pecorino cheese, shredded or grated
- 1/4 teaspoon crushed red peppers
- Olive Oil
- Salt
Instructions
Step 1
Add all the almonds and mint to the food processor and blend until smooth.
Step 2
Now add the remaining ingredients (except olive oil and Pecorino cheese) to the food processor and blend.
Step 3
Stop the processor occasionally to scrape the sides and repeat until smooth.
Step 4
Scrape the mixture into a bowl and add the Pecorino cheese. Then, drizzle with olive oil while mixing by hand with a spoon until blended to your desired consistency, being careful not to make it too oily.
