  • 1 cup soda water
  • 1 cup cornflour
  • 1 cup plain flour
  • 1 cup plum sauce
  • eggplant
  • medium zucchini
  • large carrots
  • red capsicum
  • green capsicum
  • 2 pieces mushrooms

Combine flours in a mixing bowl. Lightly mix in soda water to form a light batter.

Trim vegetables into equal sizes Chinese style.

Lightly dust trimmed vegetables in cornflour. Dip into the prepared batter and fry in hot oil until crisp, about 3 minutes.
