  • 1/2 cup coconut oil
  • 2 cups blueberries
  • 1 cup milk
  • 1 cup sugar
  • 2 each eggs
  • 1 teaspoon salt
  • 3 cups flour
  • 4 teaspoons baking powder

Combine flour, baking powder, salt, and sugar in a mixing bowl.

Beat eggs, milk, and coconut oil until combined.

Pour the wet ingredients into the dry ingredients.

Stir just until combined; the mixture should still contain lumps.

Gently fold in the blueberries.

Using an ice cream scoop, fill the lined muffin tins with batter.
