- 4 tablespoons ice water
- 1 egg yolk
- 3/4 cup shortening
- 1/2 teaspoon salt
- 2 cups flour

Step 1
Sift the flour and salt together. Work in the shortening with your hand. Beat the egg yolk and ice water together and add to the flour mixture. Toss lightly and form into a ball.

Roll out the dough to 1/8-inch thick and cut into 3-inch circles. Place a tablespoon of filling onto each circle (recipes for six fillings are included in this database). Chill the dough circles. Fold each circle over into a half-moon shape and press the edges together with a little water to seal. Arrange the piroshki on a greased baking sheet.
