Ingredients
- 1 cup split red lentils
- 2.5 cup water
- 1 tablespoon olive oil
- 0.5 onion diced
- 2 cloves minced garlic
- 0.5 cup diced orange bell pepper
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 teaspoon cayenne pepper
- 0.75 cup shredded daikon
- 1 teaspoon ume plum vinegar
- 2 teaspoon gomasio
- 1 cup basmati rice
- 2.5 cup water
- 0.5 teaspoon salt
Instructions
Step 1
In a medium pot, heat olive oil and saute onions, orange bell pepper, garlic, and split red lentils.
Step 2
Add 2.5 cups water and boil on medium-high heat for 15 to 20 minutes, or until the water has cooked into beans. After the beans have cooked for 10 minutes, add the turmeric, coriander powder, 1 teaspoon salt, and cayenne pepper to blend flavors.
Step 3
Using a julienne peeler, shred the daikon and add to a small bowl. Add the ume plum vinegar and gomasio, and mix well.
Step 4
Place 1 cup basmati rice in a small pot and add 2.5 cups water. Heat until water starts boiling. Add 0.5 teaspoon salt.
Step 5
Lower heat to low, cover the pot, and cook for 25 minutes or according to packaging instructions.
Step 6
Serve the cooked lentils in a bowl, place the basmati rice on top, and serve with a side of daikon relish.
