Savoury Cheddar Onion Muffins

IntermediateSavoury Cheddar Onion Muffins are a great bread alternative to accompany soups and salads. Also great for an "anytime" snack...especially with herbed butter.
For this recipe I used 1 cup of Whole Wheat flour and 1 cup of 12 Grain flour. My cheese choice was Old Cheddar.
Feel free to use the flours and cheese of your choice to customize your flavour profile.

- 1 cup sour cream
- 2 eggs
- 1 1/2 cups grated cheese(optional)
- 1/2 teaspoons salt
- 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 2 cups flour(optional)
- 1/4 cup oil(optional)
- 2 1/2 teaspoons dried minced onion

Preheat oven to 375º

Grease a 12 cup muffin tin.

Grate cheese.

Choose flour combination

Mix dried onion into sour cream.

Combine flour/flours, baking soda, baking powder, salt.

To the sour cream/onion mixture and the eggs and oil.

Combine the flour mixture with the sour cream mixture.

Add the grated cheese.

Scoop into muffin tin.

Bake for approximately 18-20 minutes.

Let cool for a few minutes and remove from tin.
