Vegetable Caldereta


1 cup Tofu or paneer,cubed
1 cup potatoes,cubed
1 cup carrots,cubed
1 cup sweet/bell pepper,cubed
1 cup tomatoes,chopped
2 tablespoons nutritional yeast
2 tablespoons fenugreek powder
1/2 teaspoon asoefetida (you can use 2 tsp of onion and ½ tsp garlic)
1 teaspoon green chili
salt to taste
3 tablespoons butter or vegetable oil
1 teaspoon black pepper (ground)
1 tablespoon soya sauce
1 cup milk or cream
5 tbspful creamy peanut butter (not the sweet type)
3/4 cup or peanuts,ground
2 tablespoons coriander leaves,chopped


In a saucepan,boil potatoes,carrots,and beans till soft,adding potatoes first,then carrots after few minutes,then lastly,the beans.Transfer into a bowl.. .
Put butter/oil in the saucepan over medium heat fry the chillies then tomatoes(if using onion and garlic,saute' onion and garlic first) add a little water,put hing and black pepper.Stir to avoid burning,if necessary,add little more water.
When tomatoes are very soft,add the boiled vegetables,tofu/paneer,soya sauce,fenugreek powder,nutritional yeast,mix well.Let it simmer for a few minutes.
Add the paneer/tofu.And then the peanuts/peanut butter,milk/cream and mix again.Then lastly add salt and coriander leaves,simmer for a minute and remove from heat.
SERVE with rice or bread.Enjoy!
