Sweet Potato fry
3 sweet potatoes
1 tsp mustard
1 tsp urad dall
2 tsp veggie powder
1/4 cup grated coconut
2 tsps cooking oil (I have used sunflower oil)
Add salt to taste
Wash and clean the sweet potatoes.
Do not peel off the skin completely, instead scrap the skin and remove the dirt.
This will preserve the nutrition.
Cut the sweet potatoes into small pieces and keep it.
Heat the kadai and add 2 tsps of oil and add mustard to splutter.
Add urad dhal and saute it till it becomes light brown in color.
Add turmeric powder and sweet potato, mix them and saute for few seconds.
Now sprinkle few drops of water (sweet potato takes less water to get cooked)
Close the kadai with a lid and let the sweet potato get cooked for few mins.
Open the lid and check whether it is soft. If not sprinkle few more water and repeate the process.
Once it is cooked, add veggie powder and salt and mix them.
Turn off the gas and add grated coconut and mix well.
