  • 3 Kiwifruits, peeled and sliced 1/8 inch thick
  • 1 9-inch baked pie shell
  • 1 tablespoon Butter or margarine(optional)
  • 1/3 cup Fresh lime juice
  • 1 1/4 teaspoon Grated lime peel
  • 2 Eggs, beaten
  • 1 2/3 cup Milk
  • 1/4 teaspoon Salt
  • 1/4 cup Cornstarch
  • 3/4 cup Sugar

Step 1

Combine sugar and salt in a medium saucepan and mix well.

Gradually pour in the milk. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens. Continue cooking for 1 minute, then remove from heat.

Temper the beaten eggs by blending a small amount of the hot mixture into them, then add the tempered eggs back to the saucepan.

Return the saucepan to the stove and cook over low heat for 2 minutes, stirring constantly. Remove from heat.

Stir in the lime peel, lime juice, and butter.

Pour the mixture into the prepared pie shell and chill.

When ready to serve, peel and slice the kiwifruits. Arrange the kiwi slices on top of the pie.
