- 4 medium/small zucchinis
- 1 clove garlic
- 8 leaves large mint
- to taste olive oil(optional)
- to taste Kosher salt(optional)
- to taste pepper(optional)

8-10 minutes
Thinly slice four medium/small zucchinis (not paper thin). Toss them with a bit of olive oil. Season with Kosher salt and pepper. Lay them out on a rimmed cookie sheet and broil until golden brown, about 8-10 minutes or so, keeping an eye on them so they don't burn.

Step 2
Finely mince 1 clove of garlic and 6-8 large mint leaves.

Step 3
Mix the minced garlic and mint with the warm zucchini in a bowl. Toss well and serve warm.
