Arugula, Avocado & Spinach Salad with Pomegranate Dressing

Ingredients

3 tbsp pomegranate molasses
1 tbsp honey
1 tbsp lime juice
2 tbsp olive oil
120 g baby arugula
120 g fresh spinach
1 avocado, peeled, pitted and diced
1 tomato
Salt

Preparation

Whisk together the pomegranate molasses, honey and lime juice in a small bowl. Season with salt and then whisk in the oil until emulsified.

Combine the arugula, avocado, tomato, spinach and some salt and pepper in a large bowl and toss to combine.

Pour some of the dressing around the sides of the bowl. Toss to combine.
