Japanese Shrimp & Noodles

- 1 package ramen noodles
- 1 tablespoon oil
- 1 pound shrimp, peeled and deveined
- 2 cloves garlic, finely chopped
- 1 tablespoon ginger
- 1 1/2 cups baby carrots, cut lengthwise in half
- 1 cup green beans, cut in half
- 1 3/4 cups chicken broth
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
Step 1
Cook noodles according to package directions.
Step 2
Drain.
Step 3
Heat oil over medium high heat in a skillet.
Step 4
Rotate skillet to coat the entire bottom.
Step 5
Add shrimp, garlic, and ginger and cook about 3 minutes, stirring often, until shrimp are pink.
Step 6
Remove from skillet.
Step 7
Add carrots, green beans, 1 cup of the broth, soy sauce, and sugar to the skillet.
Step 8
Heat to boiling.
Step 9
Cover and cook over medium heat for 4 – 6 minutes, stirring occasionally, until the vegetables are tender.

Add shrimp back to the pan and stir in lemon juice.
Step 11
Mix cornstarch and remaining broth until smooth.

Stir into the shrimp mixture.
Step 13
Heat to boiling, stirring constantly.

Boil and stir for 1 minute.
Step 15
Serve over noodles.
