- 4 pounds whole chicken
- handful Italian parsley
- 4 cloves garlic
- 15 crackers saltine crackers
- 1 tablespoons orange marmalade
- 1 lemon lemon zest
- 1 lemon lemon juice
- drizzle olive oil
- 1/2 teaspoons hot curry
- 1/2 lemon lemon juice
- 1/2 teaspoons brown sugar
- dash salt
- dash black pepper
- 1 tablespoons olive oil
Instructions
Step 1
Preheat oven to 350 degrees Fahrenheit.
Step 2
Clean the whole chicken and pat it dry.
Step 3
In a food processor, combine Italian parsley, garlic, saltine crackers, orange marmalade, lemon zest, juice of 1 lemon, and a drizzle of olive oil. Pulse a few times until roughly chopped and combined.
Step 4
In a small bowl, combine hot curry, juice of 1/2 lemon, brown sugar, salt, black pepper, and 1 tablespoon of olive oil. Stir with a spoon to combine.
Step 5
Gently separate the skin from the meat of the chicken and carefully stuff the prepared stuffing mixture under the chicken skin.
Step 6
Rub the prepared curry mixture all over the outside of the chicken.
Step 7
Place the stuffed and seasoned chicken on a rack in a baking dish. Fill the bottom of the baking dish with 1 cup of water.
Step 8
Bake for approximately 20 minutes per pound of chicken, or until the juices run clear from the thigh when pierced.
