- 225 grams 00 flour
- 75 grams granulated sugar
- 125 grams salted butter
- 1 egg yolk egg yolk(optional)
- 1 can sweetened condensed milk
- 175 grams dark chocolate
- 50 grams butter
Instructions
Step 1
Place the can of sweetened condensed milk in a pot large enough to completely cover it with water (even by an inch if possible).
Step 2
Bring the water to a simmer and leave on moderate heat for about 3 hours (for a more browned, 'caramelly' effect, follow Elga's recommendation). Let it cool completely in the water.
Step 3
Prepare the sablée by combining flour, butter, and sugar in a food processor. Process until the mixture is crumbly.
Step 4
If the sablée mixture does not compact as desired, add the optional egg yolk.
Step 5
Press the sablée mixture into a greased and floured baking pan and refrigerate while preheating the oven to 180°C. Bake the base for approximately 20 minutes.
Step 6
Let the baked base cool, then spread the cooled sweetened condensed milk over it. Follow with the chocolate (dark or milk) melted previously with butter in a double boiler.
Step 7
Refrigerate for a few hours, then serve.
