I love bread and making a healthy bread is even better! This banana bread is full of chunks of banana and blueberries so tender they pop in your mouth. This is one Banana Bread that won't disappoint and best of all, it's guilt free!!

  • 1 cup blueberries
  • 3 mashed very ripe bananas
  • 1/2 cup unsweetened applesauce
  • 1/2 cup egg substitute
  • 1 egg(optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup oats
  • dash cinnamon
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour

Preheat oven to 350°F.

In a bowl, mix together dry ingredients (oats, cinnamon, salt, baking powder, sugar, all-purpose flour, whole wheat flour) until well combined.

In a separate bowl, mix the eggs (or egg substitute), applesauce, and mashed bananas.

Stir the banana mixture into the flour mixture, then gently fold in the blueberries, being careful not to crush them.

Bake in a greased loaf pan for 1 hour, or in 3 greased mini pans for 40 minutes.

Check for doneness by inserting a toothpick; it should come out clean. Note that banana may stick to the toothpick.

Keep the bread refrigerated after baking.
