- 115.0 grams almond flour
- 200 grams powdered sugar
- 90 grams egg white
- sugar
- 1/2 cup egg white
- 1/2 cup sugar
- 1 cup butter
- 1.5 teaspoons flavoring
Instructions
Step 1
Preheat oven to 300 degrees F. Line baking sheets.
Step 2
In a mixing bowl, combine almond flour and confectioners sugar. Set aside.
Step 3
For the meringue, beat egg whites and sugar until medium stiff peaks form.
Step 4
Gently fold the almond flour and powdered sugar mixture (broyage) into the meringue.
Step 5
Pipe the meringue mixture into round disks onto the prepared baking sheets. Set aside to form a skin.

Bake the macaroons for about 10 minutes or until just firm.

For the buttercream, warm egg whites and sugar in a heatproof bowl over simmering water, stirring constantly.
Step 8
When the mixture is warm, remove the bowl from the simmering water and beat until stiff.
Step 9
Once the mixture is cold or at room temperature, add cubed butter and continue beating until combined and fluffy.
Step 10
Add 1 1/2 teaspoons of flavoring to the macaroons and buttercream.
Step 11
Assemble the macaroons by putting the buttercream between two flat sides of the baked macaroons.
